Sofia started selling tamales through Instagram during the pandemic and soon it became something she offered every weekend: vegan tamales, vegan pozole, taco kits, etc. Operating out of her one-bedroom apartment, Sofia established Plantaqueria, providing convenient pickup and delivery services. She did pop-up events for a couple of years and even went through a few ghost kitchens to offer catering and wholesale products. Now, as the one-year anniversary of her fast-casual restaurant in Downtown San Antonio approaches, Sofia reflects on the remarkable growth—both personally and professionally. Sofia said it has been “an incredible opportunity to show San Antonio that we can still eat the foods that we grew up with, minus the cholesterol and negative effects of eating meat!”. Sofia’s dedication and vision have not only shaped her business but also left an indelible mark on San Antonio’s culinary landscape.
